The Best Potato Salad

I often find that potato salads have excessive mayonnaise and it is just too much for me. This recipe takes the classic potato salad but comes out tasting lighter and more flavorful from additions and dill instead of tasting only mayonnaise.

This potato salad is a perfect mix of potatoey bites without having large chunks of potato. The small diced potato partially mashes while still remains solid.


Step 1: Add sour cream, mayonnaise, paprika, mustard, apple cider vinegar, and egg to bowl. Mix and add salt and pepper.




Step 2: Add in pickles, shallot, dill, bacon, and celery. Mix to combine. Salt and pepper to taste.

Step 3: Add potatoes and mix to until all the potatoes are separated and covered in deliciousness.


Step 4: Transfer to serving bowl and top with bacon and dill for garnish. Refrigerate for at least an hour, ideally overnight.



Ingredients:

3lbs yellow potatoes (skin on or off) boiled for 20 minutes and cut into 1/2 cubes

3/4 cup sour cream

1/2 cup mayonnaise

1 tsp paprika

1 tbsp mustard (yellow or dijon, or a combo)

1 tbsp apple cider vinegar

3 eggs (hard boiled and mashed)

1/2 tsp salt (more to taste)

1/2 tsp pepper (more to taste)

1/2 cup chopped dill pickles

3 stalks celery (small diced)

1 shallot (minced)

4 strips thick bacon (chopped)

1 bunch dill (chopped, set some aside for garnish)


Substitutions:

You can play with the proportions of mayo and sour cream according to your tastes

I LOVE dill and use the whole bunch. If you worry about too much dill, you can sub in 3 green onions for half of the dill

This salad is unstoppable with the bacon but it will still be delicious without it


Directions:
