Homemade spring rolls are fun because you can put whatever you want in them. I also find that I pack a lot more shrimp inside than most restaurants tend to.
Step 1: To the shrimp, add oyster sauce, rice wine, soy sauce, corn starch, sugar, white pepper, and mix.
Step 2: Pan fry carrots quickly to lightly soften. Blanch bean sprouts.
Step 3: Place filling in wrapper and roll. Use corn starch slurry to seal end piece
Step 4: Deep fry and then enjoy! Serve with sauce of choice, my go-to is sweet chili sauce.
Ingredients:
1 lb raw shrimp (chopped)
1 tbsp oyster sauce
1 tsp rice wine
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp ground white pepper
1 tsp sugar
1 carrot (julienned)
1 cup bean sprouts
3 green onions
Sweet Chili Sauce (optional for dipping)
