This is a spin on a classic dish my mom always served me growing up. Now there is spinach and mushrooms in it so it's healthy!...ish.
Step 1: Preheat oven to 350 F. Boil pot of salted water. Once boiling, add pasta and cook to directions. Reserve pasta water.
Step 2: Heat olive oil in large saucepan on medium high heat. Add mushrooms and saute for 5 minutes, stirring occasionally. Add spinach and saute until wilted down.
Step 3: While mushrooms cook, in a bowl, whisk mushroom soup, tuna, garlic powder, cheese, salt, pepper, and milk. Add into saucepan with mushrooms and spinach.
Step 4: Add cooked pasta to saucepan and stir to combine. Add pasta water as needed to thin.
Step 5: Transfer pasta to 9x13 pan.
Step 6: In a small saucepan, heat olive oil. Add breadcrumbs and heat until toasted.
Step 7: Sprinkle breadcrumbs over pasta and bake for 25 minutes.

1 lb rigatoni
1 can mushroom soup
1 can tuna
1 tsp garlic powder
1 cup cheddar cheese
1/2 tsp salt
1/2 tsp pepper
1/2 cup half and half
1/2 cup 1% milk
10 oz mushrooms (chopped)
10 oz spinach
3/4 cup panko bread crumbs

Substitutions:
This is great if topped with cheese instead of breadcrumbs
Any mixture of milk will be fine
Spinach can be frozen or fresh
Any pasta will be great, but macaroni and rotini are my go-to
The mushroom soup base can be homemade but who has time for that!
