Skillet Lasagna

I found this little cutesy lasagna noodles at homegoods and just had to put them to use. If you can't find these noodles, you can always break up regular lasagna noodles.




Step 1: Bring pot of salted water to boil. Once boiling, cook pasta to al dente.


Step 2: While water heats up, in a cast iron skillet (or oven safe pan) heat oil over medium high heat. Add garlic and ground beef. Break up meat as it cooks.


Step 3: After 5 minutes, add zucchini and red pepper. Stir occasionally until softened 5-7 minutes.


Step 4: Turn stove heat to low. Add drained pasta and marinara sauce to skillet. Stir to combine. Top with basil and drop scoops of ricotta on top. Top with mozzarella.






Step 5: Bake at 375 for 7-10 minutes or until cheese is bubbly.

Step 6. Top with more basil and enjoy!

1 lb mini lasagna noodles

1 lb ground sirloin

2 cloves garlic

2 medium zucchini (diced)

1 red pepper (diced)

28 oz marinara sauce

16 oz ricotta cheese

1 cup shredded mozzarella cheese
