Shrimp Pad Thai

Updated: Feb 6, 2023

I've been there, I've gone to the store and spent $35 on Pad Thai ingredients to find that it isn't nearly as tasty as take out. I still have an almost full bottle of fish sauce to prove it. While at the Asian Market I saw Lee Kum Kee has a single serving pre-made sauce that I had to try. I will tell you, I won't be making it from scratch ever again. Everything else in the dish is still fresh and crisp, but the sauce is already good to go.

Step 1: Heat oil in pan and cook shrimp (approx. 2 minutes per side). Set aside.

Step 2: Heat oil and add peppers, green onions, onions, garlic to pan.

Step 3: Move pepper/onions to the side and pour eggs on other side of pan. Let cook then use spatula to chop egg into small pieces.

Step 4: Add noodles and sauce packet. Toss noodles.

Step 5: Add bean sprouts, cilantro, and peanuts to noodles. Toss noodles to mix.

Step 6: Plate Pad Thai and garnish with green onion, peanuts, and squeeze of lime juice.

Ingredients:

10 oz rice noodles (made according to package)

1 package Pad Thai Sauce

1/2 red or yellow pepper (thinly sliced)

1 small onion (thinly sliced)

2 cloves garlic

3 green onions (white bottoms cut lengthwise, green tops for garnish)

2 eggs

1/2 bunch cilantro (roughly chopped)

1/2 cup peanuts (chopped)
