Shrimp Fried Rice

Fried rice is my go-to when I have leftover rice. This is usually after all the saucy meats have been eaten and I'm left with a bunch of rice because I'm not great at portions. This recipe is all about what you want in your rice. Love peas? Add more! Want to add garlic? Add it! Have green onions? Use them as garnish. Have celery that you need to use? Throw it in there! Don't like carrots? Don't use them! Make this rice whatever you want, this is just a starting off point.

Step 1: Pan fry shrimp until pink (about 3 minutes). I like to cut my shrimp in half lengthwise. I find this makes them into equal-sized bite size pieces vs the whole shrimp. Once cooked, remove from pan and set aside.

Step 2: Scramble eggs and fry in pan. Either break apart in pan or chop up once removed from pan. Set aside.


Step 3: On high heat, add vegetable oil to pan. Add onions and carrots, fry for 2 minutes. Then add mushrooms.



Step 3: Keeping pan on high heat, add rice, 3 Tbsp soy sauce, sesame oil, and sugar to pan. Stir and taste, add more soy/sesame if necessary.

Step 4: Add shrimp, peas and eggs back to pan. Stir to mix and serve garnished with sesame seeds.



Ingredients:

8-10 large shrimp

2 eggs

1 medium onion (chopped)

3 carrots (chopped)

3/4 cup chopped mushroom

3 cups cooked rice

3-4 Tbsp soy sauce

1-2 Tbsp sesame oil

2 tsp sugar

1/2 cup frozen peas (thawed)

sesame seeds (optional)








Directions:
