Seafood Enchilada Dip

This is inspired by the seafood enchiladas I would always get a the Mexican restaurant by my parent's house. I wanted all the tasty seafood and cheesiness without the excess tortillas I usually peel away from enchiladas. So I created this dip version which is basically a seafood dip with queso blanco.


Step 1: Combine cream cheese, sour cream, crab, garlic salt, paprika, chili powder, and lemon juice. You may need to zap in the microwave for a few seconds to soften the cream cheese. Mix in chopped shrimp.




Step 2: Making the Queso Blanco. Bring milk and cream to a simmer. Mix in garlic powder, salt, pepper, green onions, red pepper, jalapeño, and cheese. Mix together until melted. Create cornstarch slurry with cornstarch and 1 tbsp water or milk from pan, mix in with queso. Whisk until thickened. (Should still be runny)



Step 3: Mix queso blanco with cream cheese mix. Pour into baking dish, top with green onions. Serve warm or bake at 350 degrees for 15-20 minutes.

4oz cream cheese

4oz sour cream

1 can lump crab

1/2 pound cooked shrimp

1/2 tsp garlic salt

1 tsp paprika

1/4 tsp chili powder

1 tsp lemon juice

1/2 cup milk

1/4 cup cream

1/2 tsp garlic powder

2 green onions (chopped, reserve 2 tbsp for garnish)

1/2 red pepper (small diced)

1 jalapeño (fine diced)

1/4 lb white American cheese

1 tsp corn starch

1/4 tsp salt

1/4 tsp pepper
