Roast Chicken

A roast chicken dinner is something that seems a lot harder than it actually is. This is so simple and easy. You can also mix it up with different vegetables and herbs.


Step 1: Preheat oven to 425 F. Toss veggies in olive oil with salt and pepper in baking pan.


Step 2: Rinse chicken and heavily salt inside of chicken. Add lemon, garlic, thyme. Tie legs together and tuck in wings.


Step 3: Melt butter and add rosemary, thyme and garlic salt. Brush all over chicken.

Step 4: Roast in oven for 1 hour 15 minutes or until internal temperature reaches 165 F.


Ingredients:

1 5lb chicken

2 cups baby potatoes (halved)

6 carrots (peels and chopped into 1 inch pieces)

1 large onion (cut into 1 inch pieces)

5 stalks celery (cut into 1 inch pieces)

3 Tbsp olive oil

1 lemon

1 head garlic

1 bunch thyme

4 Tbsp butter

1 tsp rosemary

1 tsp thyme

1 tsp garlic salt
