Peanut Noodles

I turned to these noodles because I had some vermicelli leftover. This is a versatile dish that is super easy and you probably already have all of the ingredients in your home.

Step 1: Combine peanut butter, soy sauce, honey, gochujang, sesame oil, and rice vinegar in bowl. Whisk together, if it is hard to whisk the peanut butter, zap it in the microwave for 10 seconds. Adjust seasonings to taste.


Step 2: Toss noodles with sauce. Plate and top with green onions, peanuts and sesame seeds.


Ingredients:

1/2 cup peanut butter

1/4 cup light soy sauce

2 tbsp honey

1 tbsp gochujang

1 tbsp sesame oil

1 tbsp rice wine vinegar

8 oz vermicelli rice noodles (cooked according to directions)

2 green onions

1/4 cup chopped peanuts


Directions:

Step 1: Combine peanut butter, soy sauce, honey, gochujang, sesame oil, and rice vinegar in bowl. Whisk together, if it is hard to whisk the peanut butter, zap it in the microwave for 10 seconds. Adjust seasonings to taste.

Step 2: Toss noodles with sauce. Plate and top with green onions, peanuts and sesame seeds.


Notes:

The proportions in the sauce may vary depending on your tastes. Start with the initial amounts and add more honey, soy, gochujang, or peanut butter based on what you like.

I enjoy these noodles at room temperature but they are also great cold or hot.
