The perfect summer dessert. Light, sweet, and pairs perfectly with ice cream. Peaches are abundant in the summer and I'm trying to take full advantage. I also shop at Costco and buy things in bulk and have more peaches than I know what to do with.
Step 1: Mix brown sugar, lemon juice, cinnamon, salt, corn starch, and apricot jam in a medium sized bowl. Add peach slices to bowl and toss to coat.
Step 2: Roll out pie dough. Add peach slices in circular pattern of choice. Fold over edges and brush with egg wash. Sprinkle sugar on crust.
Step 3: Bake on parchment paper at 375 degrees for 40 minutes.
Step 4: Serve with ice cream or whipped cream.

3 peaches (sliced)
1/4 cup light brown sugar
1/2 lemon (juiced)
1 tbsp cinnamon
1 pinch of salt
1 tsp corn starch
2 tbsp apricot jam
1 egg (for egg wash)
1 tbsp sugar (optional for crust)
