This recipe is a product of having way too much pizza dough leftover and wanting to have something other than pizza. This is so versatile with the ingredient you have on hand, so many different veggies could go in this.
Step 1: Roll out pizza dough on flat surface. Spread pesto evenly across the surface.
Step 2: Top with artichokes, mushrooms, and cheese.
Step 3: Along the long edge, gently fold the dough over 1 inch. Carefully roll until fully rolled and the edge seam of the dough is down.
Step 4: Cut roll into 1 inch rounds. Place on baking sheet at least 2 inches apa
Step 5: Bake for 14-16 minutes. Best served warm.

3-4 chopped artichokes (I used canned)
5-6 sliced mushrooms
8 oz mozzarella cheese
