Crispy Bacon Spinach Pasta Sauce

This pasta sauce is next level. You get the creaminess with only 1 tbsp of butter and no cream at all. It is easy to make and only takes a few minutes. Have it on your pasta of choice.

Step 1: Fry bacon. Set aside leaving 1 tbsp on fat in the pan.

Step 2: Over medium high heat, add garlic and butter to pan. Cook until fragrant and bubbly (almost frothy), about 1 minute. Add flour and mix.


Step 3: Once flour is fully whisked in, add milk and chicken stock. Add salt and pepper and bring to a simmer.


Step 4: Once simmering, turn heat to medium and add parmesan cheese. Whisk until melty and combined. Add spinach. Add pasta water to thin.



Step 5: Add bacon back into sauce, saving some to sprinkle on top of plate.

Step 6: Serve over your pasta of choice. Top with grated parmesan.


Prep time: <5 minutes Cook time: 10-15 minutes Recipe makes 2 cups of sauce

Ingredients:

2 strips bacon (cut into 1/4 inch pieces)

2 cloves garlic (minced)

1 tbsp butter

1 tbsp flour

1 cup 1% milk

1 cup chicken stock

1/2 cup shredded parmesan cheese (additional grated for garnish)

1 cup frozen spinach

pasta of choice


Directions:

Substitutions:

- I use 1% milk but skim or 2% will also be fine

- I used mushroom ravioli but any pasta would be delicious

- You can use fresh spinach and it will be equally tasty, budget an extra 2 minutes for it to cook down in the sauce
