We all know I Costco is my favorite place, but that means I am also often left with giant containers of produce that need to be used before they go bad. This time I had spinach and broccoli to use so I made soup. This soup is sooo simple and easy, and as a bonus, it is healthy and low-carb.
Step 1: Heat olive oil on medium high heat. Add broccoli and sauté for 7 minutes.
Step 2: Add garlic, spinach and sauté for 1 minute until fragrant. Add chicken stock and simmer (covered) for 20 minutes.
Step 3: Add cream and mix using hand blender. Salt and pepper to taste. Serve hot with sour cream.
Ingredients:
4 cups fresh broccoli
3 cloves garlic (chopped)
4 cups fresh spinach
4 cups chicken stock
1/2 cup half and half
salt and pepper to taste
sour cream (optional garnish)
