Now, this may be weird that I made "cookout corn" on the stovetop. You can easily throw a cast iron on the grill and make it on there. This is something you can make ahead of time if you don't want to be overwhelmed the day of.
Substitutions/Additions
You can omit the tomatoes, but I think they melt into the dish for a nice flavor
Bacon can also be left out to make the dish vegetarian
An addition of jalapeño or parsley would add great color and flavor
Step 1: Fry bacon. Remove from pan and leave some fat to cook the corn.
Step 2: Turn stove to high heat and add corn. Cook for 1-2 minutes and add peppers. Cook for 2-3 minutes. Salt and pepper to taste
Step 3: Turn down heat to medium high, add tomatoes. Cook for 2 minutes, stirring occasionally.
Step 4: Turn off heat and add butter and lime juice and zest.
Step 5: Plate and top with bacon. Garnish with parsley.

2 cobs of raw corn (kernels cut off the cob)
2 peppers, diced (any color)
1/2 cup cherry tomatoes (quartered)
1 tbsp butter
1/2 lime (zested and juiced)
