Okay, so many would call these Scotcheroos but I feel like the butterscotch plays such a small role that the name is not fitting. This is a spin on the original recipe from Rice Crispies that involves a lot less sugar...so it's healthy, right?
Step 1: In a medium saucepan over medium heat, melt butter, corn syrup, honey and salt. Once melted, add peanut butter and stir until creamy and combined.
Step 2: In a large mixing bowl, add rice crispies. Pour over peanut butter mixture. Toss with nonstick spatula to combine.
Step 3: Line 9x13 pan with parchment paper and spray with nonstick spray. Pour in rice crispies in and press into pan.
Step 4: In a microwavable bowl, add chocolate chips and vegetable oil. Microwave in 20 second increments, stirring in between until melted and smooth. Pour over rice crispies, smooth for full coverage.
Step 5: In a microwavable bowl, add butterscotch chips and vegetable oil. Microwave in 20 second increments, stirring in between until melted and smooth. Pour over chocolate in a line pattern.
Step 6: Using a knife or chopstick, drag through chocolate in looping pattern to swirl the chocolate. Allow to set at room temperature until chocolate hardens or use fridge for a faster set.
