Baked Chicken Fajitas

These are perfect for an easy, one pan weeknight dinner.

Step 1: Toss chicken with chipotle sauce (diced chipotle peppers optional), lime juice, lime zest


Step 2: Toss peppers and onions with olive oil, salt and pepper. Place chicken on top and bake at 425 for 15 minutes.


Step 3: Remove top layer of chicken and place peppers back in over to be broiled on high for 3-5 minutes. Watch carefully.


Step 4: Toast fajitas on gas stove. If you don't have a gas stove, wrap tortillas in damp paper towel and microwave for 15 seconds.


Step 5: Build your fajitas with preferred toppings.


Ingredients:

- 1 small can of chipotle peppers

- chicken breast (cut into thin strips)

- 2 limes

- 3 peppers (orange, yellow, red or green)

- 1 red onion

- tortillas

- 1 avocado

- cheese of choice

- sour cream (optional)
